Spanish Rice With Ground Beef Recipe @pinch

This is an easy, quick, and economical dinner that packs a big punch of flavor. The slightly spicy Spanish rice has the typical Mexican flavors you'd expect and is the source for all the flavor in this easy dinner. The sweet corn mixed with the spices is the perfect combination. The crunchy corn chips and cheese are a nice topping for this easy casserole. A great dinner idea if you are busy and looking to get something on the table. I use a potato masher when browning my ground beef, and use a rolling pin on my ground corn chips (I gently roll the pin over the unopened bag).

Ingredients :
  • 1 box(es) Zatarains Spanish rice
  • 1 can(s) Delmonte diced tomatoes w/basil, garlic & oregano
  • 1 can(s) Mexican style corn, 11 oz
  • 1 cup(s) Kraft shredded Mexican cheese blend
  • 2 bag(s) Fritos corn chips, 1 oz each (snack size)
  • 1 pound(s) ground beef
Intructions :
  • Brown and drain ground beef
  • Add corn
  • While ground beef is browning cook Spanish rice according to directions on box using the can of tomatoes
  • Add rice to ground beef mixture. Pour into sprayed 9 x 13 pan
  • Sprinkle cheese over top
  • Add crushed corn chips (optional)
  • Cook for 10 minutes at 350.
