Spinach Cheese Bars Recipe @pinch

Enjoy these cheesy spinach bars when they're still warm or at room temperature. This is a super simple and versatile dish. They can be an addition to a brunch buffet, served as a side dish, or eaten as an appetizer. You can jazz these up by adding different types of cheese, such as pepper jack or smoked cheese. An employee I worked with brought this recipe in one day and I fell in love with it. I'm not a big fan of spinach and hesitated but I loved these bars. Ingredients :
  • 1 package(s) frozen chopped spinach
  • thawed and squeeze out excess water (12 oz)
  • 1 cup(s) milk
  • 1 cup(s) all-purpose flour
  • 1 teaspoon(s) baking powder
  • 1 teaspoon(s) salt
  • 1 stick(s) butter
  • softened
  • 1 pound(s) Monterey jack cheese
  • cubed
  • 2 large eggs
Intructions :
  • Preheat oven to 350 degrees. Beat together the softened butter and eggs.
  • Mix in milk
  • flour
  • baking powder
  • and salt.
  • Fold in spinach and cheese.
  • Spread in a 9x13 pan sprayed with cooking spray.
  • Bake in preheated oven for 40-45 minutes. Once baked
  • cut into small squares to serve. Can be eaten cold.
