Ingredients :
- 5-6 large summer squash
- 2 cup(s) steamed rice
- 1 medium onion, diced
- 8 slice(s) bacon, cooked crisp
- - salt and pepper, to taste
- - butter
Intructions :
- Wash 4 squash and cut diagonally. With a tablespoon, scrape out the seeds and membrane
- Cut a small even slice from the bottom side so the squash will sit on its own
- Chop 2 squash
- Steam until tender
- Cook bacon until crisp. Pat with a paper towel and set aside
- In the same skillet, saute the chopped onion
- Add rice, steamed squash and crumbled bacon; saute until well incorporated
- Set squash on a cookie sheet. Generously spoon mixture into squash boat. Top with a few dots of butter
- Bake for 20 minutes or until the squash boat is tender when pierced with a fork.
