This crisp is not your ordinary sweet potato casserole. The sweet potato center is creamy. We loved the layer of tangy cranberries and crisp apples. Once baked, the oat crumble adds a crunchy texture. There are many layers of delicious flavor in this easy sweet potato crisp. So good, It is almost a dessert! This has been a favorite side dish at our holiday table for several years. These are the only sweet potatoes that my kids will eat. They are wonderfully festive and are a great accompaniment to turkey or ham.

Ingredients :
  • 8 ounce(s) cream cheese or low-fat cream cheese, softened
  • 40 ounce(s) canned cut sweet potatoes, drained
  • 3/4 cup(s) brown sugar, firmly packed, divided
  • 1/4 teaspoon(s) cinnamon
  • 1 cup(s) apples, chopped
  • 2/3 cup(s) fresh cranberries, chopped
  • 1/2 cup(s) all-purpose flour
  • 1/2 cup(s) old-fashioned or quick-cooking oats, uncooked
  • 1/3 cup(s) cold butter
  • 1/4 cup(s) pecans, chopped
Intructions :
  • Preheat oven to 350 degrees
  • Beat cream cheese, sweet potatoes, 1/4 cup brown sugar, and cinnamon with an electric mixer on medium speed until well blended
  • Spoon into 1 1/2-quart casserole dish. Top with apples and cranberries
  • Mix flour, oats, and remaining 1/2 cup brown sugar in a medium bowl. Cut in butter until the mixture resembles coarse crumbs. Stir in pecans. Sprinkle over fruit mixture
  • Bake for 35 to 40 minutes or until heated through. May be assembled early and refrigerated. Remove from refrigerator 1 hour prior to baking.
