This quick and easy taco casserole is a great weeknight meal. If you love Rotel dip, you'll love this cheesy casserole. It's similar to the Velveeta and Rotel dip, except it is kicked up a few levels. Sour cream makes this super creamy. Rotel and jalapenos add a little kick. Browned ground beef is seasoned with taco seasonings that punch the flavor and adds heartiness to the meal. Adding crushed tortilla chips, though, is what makes this casserole.\u00a0 Unbelievably easy to make and unbelievably delicious to eat. Ingredients :
- 1 pound(s) Velveeta cheese
- 3 - jalapeno peppers
- chopped
- 1 1/2 pint(s) sour cream (24 oz)
- 1 can(s) Rotel tomatoes (10 oz)
- 1 can(s) tomatoes
- diced (14.5 oz)
- 1 1/2 pound(s) ground chuck
- 1 medium onion
- chopped
- 1 package(s) taco seasoning mix
- 1 package(s) tortilla chips
- plain
Intructions :
- Brown ground chuck with onion in a skillet. Drain fat
- return to skillet
- and add taco seasoning. Set aside.
- Melt cheese
- sour cream
- peppers
- and tomatoes in a saucepan over low heat until the cheese is completely melted.
- Combine the meat and cheese mixture.
- Crush the chips and set aside. Layer meat/cheese mixture in a 13x9 baking dish.
- Top with chips and repeat layers. You should be able to get three layers.
- Ending with chips on top.
- Bake at 350 degrees until the top and sides are bubbly and slightly browned (approximately 30 minutes).
