Mexican flavors and meatloaf?! You bet! We absolutely loved this dinner. This twist on meatloaf is perfectly moist and spicy. Easy to make, it tastes like a combination of a cheeseburger and a taco. If there are any leftovers, crumble the meat up and sprinkle over nachos. Yum! Out of all the taco meatloaf recipes I have tried, this one is hands down the best! My picky kids love it.

Ingredients :
- 1 large egg
- 1/2 cup(s) sour cream
- 1/3 cup(s) salsa
- 3-4 tablespoon(s) taco seasoning (store bought)
- - salt, to taste
- 1 cup(s) crushed tortilla chips
- 1/2 cup(s) shredded cheddar cheese
- 2 pound(s) lean ground beef
- - sliced tomato, chopped black olives, chopped green onion, shredded lettuce - optional toppings
Intructions :
- In a large bowl, whisk the egg
- Add all ingredients except ground beef. Mix well
- Add ground beef and mix well
- Shape into loaf in baking dish
- Bake at 350 F for 60-70 minutes. Time will depend on how thick you make your loaf
- While hot, place on a serving platter. Top with sliced tomato
- Then sprinkle grated cheese
- Loosely cover with foil so the heat from the meatloaf melts the cheese
- Meanwhile, prepare any combination of shredded lettuce, chopped green onion, chopped black olives, sour cream, and extra salsa to serve on the side or on top of the meatloaf.
