Tater Tot Casserole With Bacon Recipe @pinch

Your whole family is going to fall in love with this easy tater tot casserole. Crispy tater tots, gooey cheese, and smoky bacon... what's not to love?! Hearty and filling, this will be on your regular dinner rotation. Slight variations on a very basic recipe made this one a HUGE hit with my family! I was instructed to throw the OLD recipe out ... this was the keeper. Used mini tater tots for more tot coverage. I did not add salt ... enough salty flavor comes from the bacon.

Ingredients :
  • 3 pound(s) ground beef
  • 1 pound(s) bacon, center cut
  • 1 large onion, diced
  • 1 can(s) Campbell's cream of chicken soup with herbs (10.5 oz)
  • 1 can(s) Campbell's cream of mushroom soup with garlic (10.5 oz)
  • 1/2 can(s) water (use soup cans)
  • 1 package(s) mini tater tots
  • - cheddar or colby-jack cheese (shredded)
Intructions :
  • Pre-heat oven to 350
  • Cut bacon into small pieces. In a large skillet, start to render to ALMOST crisp. Do not drain yet
  • Add the hamburger to the bacon and grease. Brown the hamburger and finish rendering the bacon. (oohhh! extra flavor)
  • OK .... now you can drain. :-) Please note ... you may have to drain some of the fat in mid-browning if it is too much - you decided based on your skillet
  • Add the cream soups. Please note ... you can use regular cream soups but these flavored ones really add to the recipe
  • Add 1/2 can water. Stir completely to be sure soups and meat are completely incorporated
  • Pour into a 9x13 glass casserole dish. Top with shredded cheese
  • Top with tots until completely covered
  • Bake at 350 until bubbly and the tots are golden brown.
