Thanksgiving Turkey Noodle Soup Recipe @pinch

Don't toss the carcass after you're done with Thanksgiving turkey. Save it (and the leftover turkey) to make this turkey noodle soup. It's a savory soup with a well-balanced flavor. Adjust the seasonings to your liking. This will warm you up on a cold day and is perfect when you don't want a heavy post-Thanksgiving meal. It makes a large batch. Freeze extras to enjoy at a later date. A great way to stretch a couple of extra meals from your Thanksgiving turkey that can also be frozen and enjoyed anytime. This is almost as popular as the turkey dinner itself at our house. Works exactly the same with chicken. Enjoy!

Ingredients :
  • 13 cup(s) water
  • 1 - turkey carcass/bones
  • 6 ounce(s) leftover turkey - small pieces
  • 1 large onion - chopped
  • 3 large carrots - sliced
  • 3 - ribs celery - sliced
  • 3 medium potatoes - cubed
  • 1 tablespoon(s) salt or to taste
  • 1 teaspoon(s) dried parsley
  • 1 - bay leaf
  • 1/2 teaspoon(s) black pepper or to taste
  • 1/2 teaspoon(s) dried sage
  • 1/2 teaspoon(s) dried thyme
  • 6 ounce(s) dry egg noodles
Intructions :
  • Combine turkey carcass (use whatever fits!) and water in a large soup pot and boil for 1 hour.
  • Remove carcass and bones. Allow to cool and pick off any loose meat pieces. Return meat to stock.
  • Add extra leftover turkey meat as needed

  • potatoes
  • bay leaf
  • and all seasonings. Simmer for 1 hour.
  • Cook egg noodles in a separate pot according to instructions.
  • Rinse noodles in cold water and allow to cool.
  • Add noodles to soup and serve.
