Turkey Cranberry Sandwich Recipe @pinch

If leftovers are your favorite part of the Thanksgiving meal, try this turkey cranberry sandwich. It is a different way to enjoy leftover turkey. Cream cheese and cranberry sauce bring this sandwich to the next level. The tangy cranberry sauce mixes with the slightly melted cream cheese and is a tasty complement to the savory turkey. Lettuce adds a nice crunch. This sandwich is like eating a Thanksgiving meal on bread. We served it with chips, but leftover stuffing/dressing or potatoes would be great as well. This is our version of turkey sandwiches that we like to make when we still have turkey (and other) leftovers to use up after our annual Thanksgiving feast. There is no right or wrong way to make it. Just put it all between two slices of bread and enjoy.

Ingredients :
  • 2 slice(s) bread
  • 2 tablespoon(s) cream cheese, softened
  • 2 tablespoon(s) cranberry sauce (I use my homemade cranberry relish)
  • 1 tablespoon(s) low-fat mayonnaise (optional--I usually omit it, but most of my family prefers it)
  • 2 slice(s) cooked turkey (great use of your leftover Thanksgiving turkey)
  • 1/2 teaspoon(s) salt
  • 1/2 teaspoon(s) black pepper
  • 1 - romaine lettuce leaf
Intructions :
  • Lightly toast both slices of bread. Spread cream cheese on both halves while the bread is still hot, so the cream cheese melts justly slightly. Add mayonnaise, if you wish
  • Spread cranberry sauce on both slices of toasted bread with cranberry sauce (or cranberry relish)
  • Top one toasted slice with cooked turkey meat and season with salt and pepper. Then top with Romaine lettuce leaf
  • Place the other slice of bread over the Romaine lettuce. Cut the sandwich in half diagonally. Serve with reheated leftover Thanksgiving stuffing or reheated mashed potatoes and gravy.
