If you are looking for a healthy pancake recipe, look no further. Mike's pancakes are full of banana flavor. They remind us of banana bread. The protein powder adds a hint of vanilla. If you are looking to watch your waistline but still enjoy a delicious breakfast, these are a great alternative to regular pancakes. I wanted pancakes with more protein and bran than most recipes. I adapted a couple of other recipes plus my own modifications to come up with this. The bananas add moisture and flavor. Surprisingly light and fluffy considering the use of whole wheat flour. Try not to overcook.

Ingredients :
  • 1 cup(s) whole wheat flour
  • 1 cup(s) whey protein powder, vanilla
  • 1/4 teaspoon(s) salt
  • 1 teaspoon(s) baking powder
  • 1/4 teaspoon(s) baking soda
  • 2 tablespoon(s) butter
  • 1 tablespoon(s) honey
  • 2 large banana
  • 1 cup(s) almond milk, unsweetened
  • 2 large eggs
Intructions :
  • Add all dry ingredients to a large bowl and mix well
  • Mash both bananas with a fork until chunky. Melt butter in small skillet until foaming stops. Add mashed banana and cook for 2 to 3 minutes until soft
  • In a small bowl, mix eggs, honey, and almond milk until well combined
  • Fold in banana/butter mixture to the dry ingredients
  • Slowly add liquid ingredients to the dry and mix until just combined but not too much. Let batter rest for 10 minutes. Heat your griddle to 370 degrees or a little less
  • Spoon about 1/3 cup of batter onto hot griddle and cook until done on one side. Turn and cook until done on the second side. Don't overcook.
