This wrapped asparagus is an unusual and delicious appetizer. Slightly cooked and crisp asparagus is wrapped in salty prosciutto. It adds a savory and smoky component to the dish. Ingredients :
- 36 medium asparagus
- fresh
- 36 slice(s) prosciutto ham
- 4 ounce(s) blue cheese
- crumbled
- DRESSING
- 1/2 cup(s) balsamic vinegar
- 1/2 cup(s) vegetable oil
- 1/2 cup(s) olive oil
- 1/2 teaspoon(s) salt
- 1/2 teaspoon(s) pepper
- 1/2 teaspoon(s) lemon juice
- 1/2 teaspoon(s) basil
- dried
Intructions :
- Trim asparagus to 4-6 inches long.
- Peel the ends with a potato peeler.
- Place asparagus in a shallow dish with 1/2 cup water.
- Cover with plastic wrap and microwave high for 3 minutes.
- Remove asparagus and plunge into icy water to stop the cooking process.
- Drain and dry asparagus.
- Wrap each asparagus with a slice of prosciutto. Arrange on a platter with a lip around the edge.
- Sprinkle blue cheese over the top.
- Whisk the dressing ingredients together. When ready to serve
- pour the dressing over it.
