This wrapped asparagus is an unusual and delicious appetizer. Slightly cooked and crisp asparagus is wrapped in salty prosciutto. It adds a savory and smoky component to the dish. Then, it's sprinkled with creamy blue cheese to add a touch of tang. The sweet and tangy balsamic dressing is a nice addition and cuts through the richness of the appetizer and adds a burst of flavor that lingers on your palate. The homemade dressing would work on other vegetables too. This is an easy appetizer that looks and tastes fabulous. I have made it without the prosciutto as well. Excellent both ways. You can use low-fat blue cheese to cut out some calories. Enjoy!

Ingredients :
  • 36 medium asparagus
  • fresh
  • 36 slice(s) prosciutto ham
  • 4 ounce(s) blue cheese
  • crumbled
  • DRESSING
  • 1/2 cup(s) balsamic vinegar
  • 1/2 cup(s) vegetable oil
  • 1/2 cup(s) olive oil
  • 1/2 teaspoon(s) salt
  • 1/2 teaspoon(s) pepper
  • 1/2 teaspoon(s) lemon juice
  • 1/2 teaspoon(s) basil
  • dried
Intructions :
  • Trim asparagus to 4-6 inches long.
  • Peel the ends with a potato peeler.
  • Place asparagus in a shallow dish with 1/2 cup water.
  • Cover with plastic wrap and microwave high for 3 minutes.
  • Remove asparagus and plunge into icy water to stop the cooking process.
  • Drain and dry asparagus.
  • Wrap each asparagus with a slice of prosciutto. Arrange on a platter with a lip around the edge.
  • Sprinkle blue cheese over the top.
  • Whisk the dressing ingredients together. When ready to serve
  • pour the dressing over it.
