These baked zucchini fries have a nice crunchy coating that's perfectly seasoned. The method used in this recipe helps the zucchini fries maintain their Panko crumb coating. Serve with marinara sauce or ranch dressing, for an easy appetizer or snack. This recipe is a great way to get the kids to eat their vegetables because you dip them in ranch dressing or pizza sauce. It is healthy because It is baked not fried. It just looks fried. Tastes great, and my family loves these zucchini fries.

Ingredients :
  • 1/2 cup(s) Panko bread crumbs
  • 5 small zucchini or as many as you like
  • 1 teaspoon(s) Italian seasoning
  • pinch(es) salt
  • pinch(es) pepper
  • 1/2 teaspoon(s) garlic powder
  • 1/2 teaspoon(s) onion powder
  • 1/4 cup(s) grated Parmesan cheese
  • 2 large eggs
Intructions :
  • Combine the Panko crumbs, spices, and cheese
  • Put eggs in a shallow pie plate and whisk eggs
  • Cut the ends of the zucchini off and cut into quarters or smaller, lengthwise. The smaller your wedge of the zucchini is the crisper it will be
  • Dip a few of the zucchini sticks in the egg mixture one at a time. Then coat with crumbs and spice mixture
  • Spray a cookie sheet with non stick cooking spray. Place zucchini on cookie sheet
  • Bake at 425 degrees for 10 minutes. Take out and turn zucchini over
  • Bake for another 10 minutes or until coating is golden brown. Serve with pizza sauce or ranch dressing.
