Zucchini Fries Recipe @pinch

These baked zucchini fries have a nice crunchy coating that's perfectly seasoned. The method used in this recipe helps the zucchini fries maintain their Panko crumb coating. Ingredients :
  • 1/2 cup(s) Panko bread crumbs
  • 5 small zucchini or as many as you like
  • 1 teaspoon(s) Italian seasoning
  • pinch(es) salt
  • pinch(es) pepper
  • 1/2 teaspoon(s) garlic powder
  • 1/2 teaspoon(s) onion powder
  • 1/4 cup(s) grated Parmesan cheese
  • 2 large eggs
Intructions :
  • Combine the Panko crumbs, spices, and cheese
  • Put eggs in a shallow pie plate and whisk eggs
  • Cut the ends of the zucchini off and cut into quarters or smaller, lengthwise. The smaller your wedge of the zucchini is the crisper it will be
  • Dip a few of the zucchini sticks in the egg mixture one at a time. Then coat with crumbs and spice mixture
  • Spray a cookie sheet with non stick cooking spray. Place zucchini on cookie sheet
  • Bake at 425 degrees for 10 minutes. Take out and turn zucchini over
  • Bake for another 10 minutes or until coating is golden brown. Serve with pizza sauce or ranch dressing.
