Apple Streusel Coffee Cake Recipe @pinch

We can't think of a better way to start the day than with a slice of this apple streusel coffee cake. It is a quick and easy to make cake that's layered with apple slices. On top is a buttery cinnamon spice crumble. The crumble melts into the apples and caramelizes them. Biting into the soft cake and caramelized apples is heavenly. Make sure to serve this warm... It is a wonderful coffee cake. This cake is a sweet, crunchy treat to bake at apple havepicking time! We used Winesap apples, and it turned out great.

Ingredients :
  • 1 cup(s) all-purpose flour
  • 1 teaspoon(s) baking powder
  • 1/2 teaspoon(s) baking soda
  • 1/2 teaspoon(s) salt
  • !/2 cup(s) sugar
  • 1/2 stick(s) butter, unsalted
  • 1 - egg
  • 1/4 cup(s) plain yogurt
  • 1 teaspoon(s) vanilla extract
  • 2 cup(s) thinly sliced peeled cooking apples
  • 1/4 cup(s) all-purpose flour
  • 1/4 cup(s) brown sugar, firmly packed
  • 1/2 teaspoon(s) cinnamon
  • 1/2 stick(s) butter
Intructions :
  • Preheat oven to 400 degrees. Spray 8' sq. pan with cooking spray
  • In a small bowl combine 1 cup flour, baking powder, baking soda, and salt; mix well and set aside
  • In a large bowl combine 1/2 stick butter and sugar; beat til light and fluffy
  • Add egg and vanilla and blend well
  • Alternately add flour mixture and yogurt to butter mixture, beating well after each addition
  • Spread batter in sprayed pan. Arrange apple slices over batter
  • In a small bowl, combine all topping ingredients. With a pastry blender cut in butter until crumbly
  • Sprinkle topping evenly over apples
  • Bake at 400 degrees for 25 minutes or until a toothpick inserted in the center comes out clean. Cool 10 minutes. Enjoy!
