Blueberry Peach Muffins Recipe @pinch

The combination of blueberries and peaches isn't that commonly used like other combinations... but it should be. These muffins are tender and melt in your mouth. What we really loved is that they are not overly sweet. So, the sweetness from the peaches is noticeable and you taste the slightly tart blueberries. The buttered spiced topping adds just the right amount of sweetness. These are very yummy! This is one of my recipes. It is wonderful for this time of year. I have a friend of mine who serves this in her coffee shop and she gets raves. I have never used frozen fruit with this recipe. But I think if the fruit is drained well, it shouldn't be a problem.

Ingredients :
  • 3 cup(s) all-purpose flour
  • 1/2 cup(s) brown sugar, firmly packed
  • 1 pinch(es) salt
  • 1/2 cup(s) sugar
  • 1 tablespoon(s) baking powder
  • 3 - eggs
  • 1/2 cup(s) milk
  • 1/2 cup(s) melted butter (1 stick)
  • 1 cup(s) peeled and chopped fresh peaches
  • 1 cup(s) blueberries
  • 2 teaspoon(s) sugar
  • 1/2 teaspoon(s) ground nutmeg
  • 1 teaspoon(s) ground cinnamon
  • 2 tablespoon(s) melted butter
Intructions :
  • MUFFIN DIRECTIONS: Preheat oven to 400 degrees
  • In a large bowl, stir together flour, sugar, brown sugar, baking powder, and salt
  • In a separate bowl, mix together eggs, milk, and melted butter until well blended
  • Pour the wet ingredients into the dry and mix until blended
  • Fold in blueberries and peaches
  • Grease muffin tins or line with paper liners and fill 1/2 to 3/4 full
  • Bake for 18 to 20 minutes or until toothpick or cake tester comes out clean
  • Melt the buttr. In another small bowl, stir together topping sugar, cinnamon, and nutmeg
  • With a pastry brush, brush the top of muffins with melted butter
  • Sprinkle with sugar mixture
  • Cool over a wire rack.
