Caramel Apple Cookies Recipe @pinch

Caramel apples and fall go together like peas and carrots. The hint of spices makes these caramel apple cookies perfect for fall. They are soft, sticky, and gooey. There's a slight crunch from the walnuts and a subtle burst of sweetness from the bits of chopped apples. I was bored today and started playing around in the kitchen. This is what I came up with. I feel that some of the best recipes happen when you are hungry. A well havestocked kitchen is a great place to play on a cool fall day.

Ingredients :
  • 1 1/2 cup(s) chopped apples (I used Honeycrisp)
  • 1 cup(s) shortening
  • 1 cup(s) brown sugar, firmly packed
  • 1/2 cup(s) granulated sugar
  • 2 large eggs
  • 1/2 cup(s) buttermilk
  • 3 cup(s) all-purpose flour
  • 1 teaspoon(s) baking soda
  • 1 1/2 teaspoon(s) salt
  • 1 teaspoon(s) cinnamon
  • 1 teaspoon(s) nutmeg
  • 1 - bag of Kraft caramels
  • 3/4 cup(s) walnuts
Intructions :
  • Cream together the shortening, sugars, and eggs
  • Add buttermilk and apples; stir well
  • Add dry ingredients and spices
  • Stir in caramel bits and walnuts
  • Place teaspoon drops on a well-greased baking pan
  • Bake at 350 F for about 10 mins.
