Creamy Cheesy Scalloped Potatoes Recipe @pinch

Not only are these scalloped potatoes easy to make, but they are also delicious. Parboiling the potatoes ahead of time speeds up the cooking process. The cheese sauce is so creamy and cheesy. The addition of ham pieces adds another depth of flavor to the side dish. These scalloped potatoes would be an easy holiday side dish. Or, it can be made after the holiday with leftover ham. These are the BEST scalloped potatoes ever. Very moist and cheesy. The addition of ham is optional. The perfect comfort food!

Ingredients :
  • 6 cup(s) potatoes, parboiled, sliced or diced
  • 1/4 cup(s) butter
  • 2 tablespoon(s) onion, diced
  • 1/4 cup(s) all-purpose flour
  • 1 teaspoon(s) salt
  • 1/2 teaspoon(s) ground mustard
  • dash(es) ground pepper
  • 1 1/2 cup(s) whole milk (can use part cream or half & half)
  • 1 1/2 cup(s) cheddar cheese, shredded
  • 2 cup(s) cooked ham, diced (optional)
Intructions :
  • Preheat oven to 350 F. Spray casserole dish with cooking oil spray or grease casserole dish with shortening
  • Saute onion in butter
  • Add 1/4 cup flour, salt, mustard, and pepper to onion and butter
  • Gradually add milk/cream whisking to make a nice white sauce. Stir and cook until thick
  • Add shredded cheese, potatoes and ham (if so desired). Stir all ingredients together. Add a bit more milk if needed. The potatoes will absorb some of the milk so you may need a little more
  • Pour into greased casserole dish. Bake uncovered in oven for about 30 min. Then, spread more cheese on top and bake for 10-15 min longer before removing from oven
  • ENJOY! These are very cheesy and rich, yummy.
