Dads Ribs N Rice Recipe @pinch

I was really surprised at how good this ribs recipe is with minimal ingredients. This cut of meat tends to be a little tough, but cooking it this way makes it just fall apart. It gets nice and caramelized. The glaze is a bit tangy, slightly sweet and perfect. Everyone will love this! My husband talks, talks, talks about his Dad's Ribs n Rice. It is a very happy memory for him. True enough a lot of his memories of growing up are food related!Both his parents have passed on early in his life and in theirs. When we moved recently, I found his mother's cookbook. Each card was hand written or typed on her old manual typewriter. As I thumbed thru it I heard my husband's stories/ memories streaming off each page... each one seemed a treasure.This one is his Father's Ribs n Rice.

Ingredients :
  • 5-6 pound(s) country pork ribs
  • 2 tablespoon(s) oil
  • 2 clove(s) garlic-minced
  • 1/2 teaspoon(s) ginger
  • 2 teaspoon(s) salt
  • 1/2 teaspoon(s) pepper
  • 3 tablespoon(s) sugar
  • 1 1/2 cup(s) vinegar
  • 4 tablespoon(s) soy sauce
Intructions :
  • Preheat fry pan to 350. Brown ribs in oil until golden
  • Reduce heat to 212 degrees. Combine all other ingredients and pour over ribs
  • Cover and braise 1 1/2 hours or until tender and ribs are glazed. Serve with rice.
