Lynn's German pecan pie recipe is lighter than the typical pecan pie. It is sweet and a little salty with a nice crispness. Topped off with a cool, creamy topping and dark chocolate shavings is just delicious. Super easy to make, this is a great recipe if you need to bring a holiday dessert but you are not the best baker. This is a fantastic tasting pie. Very easy to make. Give it a try, you won't be disappointed.

Ingredients :
- 4 - large egg whites
- 1 cup(s) granulated sugar
- 1 teaspoon(s) vanilla extract
- 1 teaspoon(s) baking powder
- 1 - pinch of salt
- 24 - Ritz crackers
- 1 cup(s) pecans, chopped or halves
- - Baker's semi-sweet chocolate squares or other chocolate for grating
- 1 - 8oz package(s) Cool Whip
Intructions :
- Preheat oven to 350 degrees. Put crackers in a Ziploc bag
- Crush until you have an even fine grind
- Beat egg whites until stiff
- Slowly add sugar, baking powder and a pinch of salt until blended
- Stir in crackers, vanilla, and pecans
- Pour into a greased 9-inch pie pan
- Bake at 350 degrees for 30 minutes or until golden brown
- Cool 1 1/2 to 2 hours
- When cooled, cover with Cool Whip
- And, sprinkle grated chocolate on top. Keep in refrigerator.
