Everyone should have a great breakfast casserole in their recipe box and this low havecarb one does not disappoint. Whether serving for a holiday breakfast or a brunch with friends, it can be prepared the night before and then just pop it in the oven an hour before you are ready to eat. It is a little different than other recipes because there is no bread. We opted to add both the sausage and bacon, because why not... The final result is savory, super cheesy, and very good. We started preparing this dish Christmas Eve for a special family brunch on Christmas morning and look forward to it every holiday season. It is very special and delicious!

Ingredients :
- 1 - dozen eggs
- 1 cup(s) milk
- 1 package(s) ground pork sausage
- 6 slice(s) bacon, optional
- 16 ounce(s) shredded cheddar cheese
- 24 ounce(s) shredded Monterey jack cheese
- 1 can(s) green chiles (4 oz), optional
- 1 tablespoon(s) all-purpose flour
Intructions :
- Add the eggs and milk to a large bowl; beat well. Set aside
- Brown sausage, breaking it into small pieces, and drain well
- If you are adding bacon, cook it well, crumble, and drain
- Add the meat and 1/2 the cheeses to the egg mixture. Add the chiles, if using. (I like to make a smaller pan with chiles for those who like a kick)
- Spray a glass oblong pan or casserole dish with cooking oil. Dust the bottom of the pan with the flour
- Sprinkle some Monterey Jack over the flour. This will form your crust
- Pour in the egg mixture
- Top with remaining cheeses
- Cover with foil and let sit overnight in the refrigerator
- Preheat oven to 350 degrees F. Keep covered and bake for 60-70 minutes
- You may uncover for the last 5-10 minutes of baking. Enjoy!
