What a lovely chess pie recipe! Perfectly sweet, smooth, and creamy, chess pie is a simple vanilla custard pie. It is uncomplicated and unsophisticated... and that's the beauty of the pie. Most chess pie recipes include milk. This one, though, eliminates the milk and increases the butter which creates a brown butter flavor. Erin's recipe has a far richer flavor than most chess pies and is delicious. My mom passed this recipe on to me years ago. Everyone loves her chess pies!

Ingredients :
  • 1 tablespoon(s) cornmeal
  • 1 1/4 cup(s) granulated sugar
  • 2 tablespoon(s) all-purpose flour
  • 3 large eggs
  • 1 stick(s) butter
  • 1 tablespoon(s) vanilla extract
  • 1 tablespoon(s) white vinegar
  • 1 - regular pie shell, defrosted
Intructions :
  • Preheat oven to 350. Melt butter in the microwave
  • Mix cornmeal, sugar, and flour
  • Add eggs and butter. Cream thoroughly
  • Mix in vanilla and vinegar
  • Pour into the pie shell and bake for 45 minutes.
