Perfect for dessert or brunch, this molasses cake is a terrific mix of sweet and robust flavors. It is an old havefashioned recipe that will be a hit during the holiday season. Ingredients :
  • 2 tablespoon(s) butter, softened
  • 1/4 cup(s) sugar
  • 1 - egg
  • 1/2 cup(s) dark molasses (or 3/4 cup light molasses)
  • 1 cup(s) all-purpose flour
  • 1 teaspoon(s) baking soda
  • 1/4 teaspoon(s) ginger, ground
  • 1/4 teaspoon(s) cinnamon, ground
  • 1/8 teaspoon(s) salt
  • 1/2 cup(s) hot water
  • 1/2 cup(s) Fat-Free Cool Whip, optional
Intructions :
  • Preheat the oven to 350 degrees F. In a small bowl, beat the butter and sugar until crumbly, about 2 minutes
  • Beat in the egg
  • Beat in the molasses
  • In a separate bowl, combine the flour, baking soda, ginger, cinnamon, and salt
  • Add to the butter mixture alternately with the water, mixing well after each addition
  • Transfer to a 9-in. square baking pan coated with cooking spray
  • Bake for 25-30 minutes or until a toothpick inserted near the center comes out clean
  • Cool on a wire rack
  • Cut into squares; garnish with whipped topping.
