Ingredients :
- 2 tablespoon(s) butter, softened
- 1/4 cup(s) sugar
- 1 - egg
- 1/2 cup(s) dark molasses (or 3/4 cup light molasses)
- 1 cup(s) all-purpose flour
- 1 teaspoon(s) baking soda
- 1/4 teaspoon(s) ginger, ground
- 1/4 teaspoon(s) cinnamon, ground
- 1/8 teaspoon(s) salt
- 1/2 cup(s) hot water
- 1/2 cup(s) Fat-Free Cool Whip, optional
Intructions :
- Preheat the oven to 350 degrees F. In a small bowl, beat the butter and sugar until crumbly, about 2 minutes
- Beat in the egg
- Beat in the molasses
- In a separate bowl, combine the flour, baking soda, ginger, cinnamon, and salt
- Add to the butter mixture alternately with the water, mixing well after each addition
- Transfer to a 9-in. square baking pan coated with cooking spray
- Bake for 25-30 minutes or until a toothpick inserted near the center comes out clean
- Cool on a wire rack
- Cut into squares; garnish with whipped topping.
