Pannaukkau (Finnish Or Swedish Pancake) Recipe @pinch

This is a fantastic way to serve a pancake havelike breakfast for a crowd. Quick and easy to prepare, as it bakes this pancake fluffs like a big puff and then deflates. The top and bottom are slightly crisp and holds in a creamy pancake havelike filling. The center is almost like a baked custard but a little more sturdy. Top with fresh fruit and homemade whipped cream for a wonderful breakfast. Simple ingredients produce amazing flavor in this pancake recipe. I was first introduced to this yummy recipe when I started going out with my husband over 30 years ago! We love it for Sunday brunch, with sausage or bacon. It rises in the oven. When you take it out, it falls and has a custard havelike consistency! So yummy!!

Ingredients :
  • 2 cup(s) milk (I use 2 percent)
  • 4 - eggs
  • 1 cup(s) all-purpose flour
  • 1/2 teaspoon(s) salt
  • 1 tablespoon(s) sugar
  • 1/4 - 1/2 cup(s) butter
Intructions :
  • Heat oven to 400 degrees
  • Put all ingredients (EXCEPT the butter) into a blender. Blend
  • When oven reaches 400, put the butter into a 9x13 pan and put into the oven for the butter to melt
  • When the butter is melted, pour the blended ingredients into the pan with the melted butter
  • Bake for 30 to 40 minutes. (I like it crispy so I do 40 min). It will puff up while baking then fall when you take it from oven
  • I serve it with butter, syrup, fresh fruit, and fresh whipping cream! Very easy and yummy. Enjoy!
