An amazing way to prepare a roasted pork loin. It is easy enough to make any day of the week, but fancy enough to serve on a special occasion. Dijon mustard adds a touch of tanginess and the crust is crisp. The pork loin is tender, juicy, and slices like butter. We really enjoyed the creamy peppercorn sauce. There's a bit of peppery spice but It is not overpowering. If you are sensitive to peppercorns, you might want to cut back on them a bit. Great to have during the fall months when the weather outside is crisp.

Ingredients :
- 1 - lean pork loin roast (2 1/2 lbs)
- 3 tablespoon(s) Dijon mustard
- 1 tablespoon(s) low-fat buttermilk
- 1 cup(s) bread crumbs
- 2 tablespoon(s) pepper
- 2 teaspoon(s) crushed mix peppercorns
- t teaspoon(s) chopped thyme
- 1/4 teaspoon(s) salt
- CREAMY PEPPERCORN SAUCE
- 3/4 cup(s) buttermilk
- 1/3 cup(s) fat-free sour cream
- 3 tablespoon(s) Parmesan cheese, grated
- 3 tablespoon(s) mayo
- 1 1/2 tablespoon(s) lemon juice
- 1 1/2 teaspoon(s) mixed peppercorns, crushed
- 1/4 teaspoon(s) salt
Intructions :
- Preheat oven to 325 degrees
- Combine mustard and buttermilk
- Spread over roast
- Combine bread crumbs, pepper, salt, thyme, and peppercorns in a bowl. Press mixture evenly over roast
- Place roast on broiler pan coated with cooking spray. Bake for 2 hours and meat thermometer reads 160 degrees. Let stand 10 minutes before slicing
- Combine all ingredients for the creamy peppercorn sauce in a bowl. Serve with pork loin slices.
