We love a delicious cheese ball recipe during the holiday's and this one is delightful. It is sweet from the pineapple with a bit of tartness from the cranberries. Super creamy, the saltiness from the cheddar cheese balances out the sweetness from the fruit. Pecans with their nuttiness and crunch are perfect. Serve with slices of toasted baguette and you have an impressive and easy party appetizer. I sometimes shape this like a pinecone and layer with whole almonds during the holidays have it always gets favorable comments.You can use any dried fruit in place of the Craisins.Serve with a nice assortment of crackers like Triscuits, Sociables, Ritz or any of your favorites.
Ingredients :
- 8 ounce(s) block cream cheese, room temperature
- 2 cup(s) shredded cheddar cheese, room temperature
- 8 ounce(s) can crushed pineapple, well drained
- 1/2 - 1 cup(s) Craisins (to your taste)
- 1 pinch(es) cinnamon
- - chopped pecans \u2013 as much as you need to cover the cheese ball
Intructions :
- Mix the cheeses together using an electric mixer until very well blended
- Add the drained pineapple and cinnamon
- Mix into the cheese using the mixer
- Add the Craisins and mix
- Place the cheese mixture in the refrigerator for 2-3 hours until well-chilled
- Roll the cheese mixture into a ball
- Roll the ball in the chopped nuts until covered on all sides.
