Kugel is commonly served on Jewish holidays and Shabbat. This potato kugel recipe is similar to a hash brown casserole but made with simpler ingredients. It is a delicious side to any meal with a soft potato center and a crunchy top. I love ethnic foods and kugel is one of my favorites. It is a Jewish casserole dish. There's also a noodle kugel which is very good. There are so many variations to these dishes. Feel free to add veggies, if you like... carrots, zucchini, etc.

Ingredients :
- 6 large eggs
- 1/2 cup(s) oil
- 4 tablespoon(s) all-purpose flour
- 1 tablespoon(s) (heaping) salt
- 1/2 teaspoon(s) pepper
- 8 medium Russet potatoes, peeled
- 2 medium onions
Intructions :
- Preheat oven to 400 degrees F. Grease a 9 x 13-inch baking dish
- In a large bowl, mix eggs, oil, flour, salt, and pepper. Set aside
- Coarsely grate the potatoes and onion by hand or with a food processor. Let stand for 3-5 minutes. Squeeze out the excess liquid
- Add the potatoes and onion to the egg mixture. Mix by hand
- Pour mixture into the greased baking dish. Spread the mixture as evenly as possible
- Bake, uncovered, for 1 hour or until golden brown on top and a knife inserted in the middle comes out clean.
