Oh, how we loved the buttery taste of this Irish shortbread. It is different than most shortbread we have made. The shortbread is very delicate, crumbly, and full of butter flavor. But, It is not overly sweet. Perfect for someone that doesn't like a sweet dessert. If you do like things a little sweeter, though, it wouldn't hurt to add another 1/2 cup of sugar to the dough. It is a sticky dough and very hard to spread. We suggest spraying your hands with cooking spray and spread into a parchment paper havelined pan. This Irish recipe will be a real treat for a mid haveafternoon pick me up with a cup of tea. I was given this recipe many years ago by a little old Irish woman I know. It far surpasses any other shortbread I have ever eaten. Even after a trip to Ireland! Melt in your mouth delicious!
Ingredients :
- 3 cup(s) all-purpose flour
- 1 1/2 cup(s) corn starch
- 1 1/2 cup(s) confectioners' sugar
- 2 1/2 cup(s) salted butter (5 sticks), room temperature (use real thing for true taste!)
Intructions :
- Cream the butter until smooth
- Add the corn starch, flour, and confectioners' sugar, a little at a time, until well mixed
- Scoop dough out onto a cookie sheet either ungreased or lined with parchment paper
- Smooth dough out onto a cookie sheet
- Bake in preheated 325-degree oven for about 30 minutes. Shortbread should not brown, but just begin to slightly lose the whiteness
- Cool to room temp
- Slice into bars or triangles.
