This was a big hit in the Test Kitchen! We used peas, but most any veggie would be delicious. We really liked the creaminess of the filling. This recipe to reinvent leftovers is sure to become a much haveawaited Thanksgiving dish. Don't know what to do with all those leftovers after your big Thanksgiving bash? Try this pot pie and I'm sure everyone will love it as much as the original feast (maybe more).

Ingredients :
- 4 cup(s) mashed potatoes
- 3 cup(s) cooked turkey meat, shredded
- 1 1/3 cup(s) leftover peas or any veggies you have, frozen can also be used
- 1 cup(s) diced onion
- 1 cup(s) diced celery
- 1 tablespoon(s) butter
- - salt and pepper, to taste
- 3 tablespoon(s) all-purpose flour
- 1 3/4 cup(s) chicken broth
- 1 sprig(s) rosemary
Intructions :
- Preheat oven to 400 degrees. Coat 12 inch pie dish with cooking spray
- Heat butter in a large skillet over medium heat. Add onion, celery, rosemary, salt & pepper and saute until onion and celery begin to brown. Sprinkle flour over mixture and cook about 3 minutes, stirring frequently
- Stir in broth gradually making sure to scrape the bottom of pan. Cook for about 5 mins until mixture starts to thicken
- Add veggies and turkey meat and mix well. Remove rosemary sprig
- Pour into prepared glass dish and let cool about 10 mins. Spread potatoes over top. Cook for 20 mins until potatoes begin to brown. For a crispy potato crust, put under broiler for 2 mins longer
- I like to serve with leftover cranberry sauce and stuffing. Yum!
