Ingredients :
  • 2 1/4 cup(s) all-purpose flour
  • 1 teaspoon(s) baking powder
  • 1 teaspoon(s) baking soda
  • 2 teaspoon(s) pumpkin pie spice
  • 1 teaspoon(s) ground cinnamon
  • 1/2 teaspoon(s) Kosher salt
  • 1/2 cup(s) butter, softened
  • 1 cup(s) granulated sugar
  • 1/2 cup(s) light brown sugar
  • 1/2 teaspoon(s) pure vanilla extract
  • 1 cup(s) pumpkin, canned (not pie filling)
  • 1 large egg
  • 1 1/2 cup(s) white chocolate chips
Intructions :
  • Preheat the oven to 350 degrees. Whisk the flour, baking powder, baking soda, cinnamon, pumpkin pie spice, and salt in a medium bowl; set aside
  • In the bowl of a stand mixer, fitted with a paddle attachment, cream the butter and sugars
  • Add the pumpkin, egg, and vanilla and combine thoroughly
  • Slowly add the dry ingredients
  • Add in white chocolate chips
  • Drop on a cookie sheet lined with parchment paper
  • Bake for 10-12 minutes in the preheated oven. Cool for a couple of minutes on the cookie sheet The recipe makes 36 small cookies or 18 large cookies.
